Ingredients
For the dough:
115 g butter (cold)
150 g farm cheese (tvorog)
250–300 g all-purpose flour
1 egg
2–3 tbsp sugar
1–2 tbsp starch (cornstarch or potato starch)
pinch of salt (optional)
For the filling:
5 ripe peaches
1–2 tbsp sugar (to taste)
1 tbsp starch (to prevent excess juice)
Instructions
1. Make the dough:
Mix cold butter with flour until it resembles coarse crumbs. Add cottage cheese, egg, sugar, and starch. Knead until you get a soft, pliable dough. It should not be sticky. Wrap in plastic wrap and refrigerate for 30–40 minutes.
2. Prepare the filling:
Slice the peaches and mix them with sugar and starch.
3. Shape the galette:
Roll out the dough into a circle. Place the peaches in the center, leaving a 3–4 cm border. Fold the edges over the fruit.
4. Bake:
Bake at 180°C (350°F) for about 35–40 minutes, until golden brown.
